Stir-Fried Tuna

ingredients
2 cans (6.5 ounce size) water-packed tuna
3 tablespoons salad oil
1 red or green bell pepper, seeded, cut into 1/2' dice
8 green onions, cut into 1/2' slices
1 clove garlic, minced or pressed
1 cup celery, sliced 1/2" diagonally
2 cups snow peas or China peas
1 can (8 ounce size) water chestnuts, drained, sliced
3/4 cup whole dry roasted cashews, optional
Sauce
1 tablespoon salad oil
1 tablespoon cornstarch
3 tablespoons soy sauce
3 tablespoons water
3 tablespoons sugar
1 tablespoon white vinegar
1/4 teaspoon ground ginger
directions
Drain tuna. Break into chunks and set aside.
Heat oil in a wok or wide frying pan. Add peppers, onions and garlic. Stir-fry for 15 seconds. Add celery, snow peas and water chestnuts. Stir-fry for 1 minute or until vegetables are brightly colored.
Stir in Seasoning Sauce. Cook over high heat, tossing and stirring until sauce is slightly thickened. Add tuna, mixing well.
Sprinkle with cashews, if used.
For Seasoning Sauce: Stir together all ingredients.

This recipe blew me away! I was browsing for an easy tuna stir-fry after babysitting my infant granddaughter all day. The sauce was awesome! My family devoured it. I substituted sugar snap peas (which I happened to have on hand) for the snow peas (which I didn't) and cooked them a bit longer. I also didn't have green onions so I chopped a few yellow onions along with some fresh chives into it. I can only imagine how much better the green onions would have been. Will definitely make this dish again and again.
