Tuna Curry on Rice

ingredients
4 tablespoons butter or margarine
1/2 cup chopped onion
1 tablespoon all-purpose flour
3/4 cup water
2 teaspoons curry powder
1/4 cup half and half
13 ounces canned tuna, well drained
2 tablespoons golden raisins
3 cups cooked rice
1 tablespoon chopped parsley
Optional Condiments

coconut
directions
Melt butter in a saucepan. Add onion. Saute until golden. Stir in flour. Cook until bubbly.
Gradually add water, cooking and stirring until smooth. Blend in curry powder and half-and-half. Cook, stirring for 1 minute. Gently add tuna and raisins. Simmer 5 minutes longer.
Spoon over hot cooked rice. Sprinkle with parsley. Serve with small bowls of chutney, peanuts and coconut.

Haven't cooked curry with flour before. I like a soupier curry over my rice. I saute onions and curry powder, add the garlic, ginger and chilies then throw in my tuna. Cook together for about 3 minutes, add water. When it starts to simmer I throw in whatever veggies. Salt to taste. Delicious over rice!
