Jiffy Baked Corn Casserole

ingredients

1/2 cup butter, at room temperature
2 eggs, lightly beaten
1 cup sour cream
1 can (8.5 ounce size) drained whole kernel corn
1 can (8.5 ounce size) cream-style corn
1 box Jiffy corn muffin mix
1 cup shredded Swiss cheese

directions

Preheat the oven to 350 degrees F. Lightly grease a 9x13 baking dish.

In a bowl, mix together the butter, eggs, and sour cream until smooth. Stir in both kinds of corn and mix well. Stir in the muffin mix and cheese until just incorporated (do not overmix).

Pour the batter into the prepared baking dish and place in the oven. Bake at 350 degrees F for 30-35 minutes or until the casserole is set in the middle.

Serve hot.

    I stirred this a couple of times while it was cooking so it was done in the middle in the time stated but if you don't stir it you will probably have to let it cook longer. The taste was very good I thought.

    This is also excellent as a topper for a casserole that needs just a bit more oomph. The souffle acts like the potatoes in Shepard's Pie.

    Have been making this dish for almost 40 years. The recipe I use differs slightlyA(just amounts of ingredients), but overall the taste would be the same.
