1/2 cup butter, at room temperature
2 eggs, lightly beaten
1 cup sour cream
1 can (8.5 ounce size) drained whole kernel corn
1 can (8.5 ounce size) cream-style corn
1 box Jiffy corn muffin mix
1 cup shredded Swiss cheese
Preheat the oven to 350 degrees F. Lightly grease a 9x13 baking dish.
In a bowl, mix together the butter, eggs, and sour cream until smooth. Stir in both kinds of corn and mix well. Stir in the muffin mix and cheese until just incorporated (do not overmix).
Pour the batter into the prepared baking dish and place in the oven. Bake at 350 degrees F for 30-35 minutes or until the casserole is set in the middle.
Serve hot.

I stirred this a couple of times while it was cooking so it was done in the middle in the time stated but if you don't stir it you will probably have to let it cook longer. The taste was very good I thought.

This is also excellent as a topper for a casserole that needs just a bit more oomph. The souffle acts like the potatoes in Shepard's Pie.

Have been making this dish for almost 40 years. The recipe I use differs slightlyA(just amounts of ingredients), but overall the taste would be the same. I've been asked to bring it to many church gatherings, etc. and had so many requests for recipe I've lost count! One of our favorites.. no matter what the meal!

I must bake this once a month. I make it to go with a veg stew, baked ham, breakfast, a treat at work, for any reason at all. It is so easy and really delicious.

I have too make this all the time for gatheerings and it's a dish that everyone requests guess what it's the first dish that's disappear, now i have to make two batches,so eveyone get's some. I love it...that everyone loves this dish and asks for the recipe

This was very tasty! We put it back in the oven and cooked it an additional 20 minutes to get it done in the middle.

i made this recipe for a reunion and added 2 cans of chili and man it was all gone when i went to get some Glad i had made it at home before My family loves it. My daughter tops it with sour cream but ots good with out it too Thanks Debbie In Florida
