3 tablespoons butter
1 tablespoon chopped onion
1 tablespoon chopped green bell pepper
1 tablespoon flour
3/4 cup milk
3 eggs, separated
2 cups corn, canned or cooked
1/2 teaspoon vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons breadcrumbs
Preheat the oven to 400 degrees F.
Melt the butter in an oven-proof skillet over medium heat. Add the onion and green pepper and cook, stirring frequently, until the vegetables are soft. Add the flour and mix well. While stirring, add the milk slowly. Continue to stir until the mixture is thick.
Beat the egg whites until stiff peaks form. Stir the egg yolks, corn, vinegar, salt and pepper into the skillet. Fold in the egg whites. Top the mixture with breadcrumbs.
Place the skillet in the oven and bake at 400 degrees F for 20-30 minutes. Serve hot.

This goes in an oven proof skillet so you don't need to remove it, just pop it in the oven and bake. Flour is equal to butter amount as for a rue. I add the breadcrumbs during the last 15 minutes of baking so they don't get too brown.
