- #83690
This recipe is similar to the "Mexi-corn" that you buy at the store and can be used as a side dish or in another recipe.
under 30 minutes
ingredients
1 bag (16 ounce size) frozen corn
4 tablespoons butter
1/2 cup chopped red onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 can (4 ounce size) diced green chiles (optional)
directions
Cook the corn according to package instructions.
Melt the butter in a large skillet, add the onion and bell peppers. Saute gently, do not let the onions brown.
Drain the corn and return it to the sauce pan. Add the butter and vegetables from the skillet.
Add the chiles, if desired, and warm through.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
