Baked Chile Cheese Corn

ingredients
4 cups fresh corn kernels, or frozen, thawed
1 cup Cheddar cheese, grated
8 ounces cream cheese, room temperature
1 can (7 ounce) diced green chiles
2 teaspoons chili powder
2 teaspoons cumin
directions
Preheat oven to 350 degrees F. Butter 1 1/2 quart baking dish or cast iron skillet.
Mix all ingredients in a large bowl until well combined. Transfer to prepared dish. Bake until bubbling, about 30 minutes.

I have been making this dish for a picnic I have every year, for the past 10 years or more. Everyone loves it and it goes. I will trying this dish in a dutch oven when I go camping with the scouts in October. I think the parents will love it.

Had this tonight and was very impressed! I added 1/2 lb. of smoked ham cut in 1/2 inch cubes. My wife said to be sure and put this in the 'have again' folder...

This recipe was incredibly easy to make. I liked that the ingredients are something most people already would have available in their house, making this recipe a good canidate for an emergency potluck or dinner party dish. The flavor was excellent and the goo facter was comforting. Maybe a little rich for lighter calorie food eaters. I going to mix the left overs with hamburger, black beans, onions, red bell peppers and stewed tomatoes and see what I can come up with!
