Chicken Gorgonzola

ingredients
2 boneless, skinless chicken breast halves
1 ounce Gorgonzola cheese
1 tablespoon olive oil
1 tablespoon butter
2 tablespoons shallots, chopped
1/4 cup chicken broth
1/4 cup port wine
1 teaspoon salt
1 dash white pepper
2 tablespoons flour
directions
Cut a 2" x 2" pocket in the thickest portion of each chicken breast. Press half of the cheese into each pocket and gently press the edges together to seal them and enclose the filling.
In a large skillet, combine the oil and butter and heat until melted. Add chicken and cook over medium heat, turning once, until lightly browned on each side. Set aside and keep warm.
In the same skillet, saute the shallots over medium high heat until softened, about 1 minute. Sprinkle flour over and stir quickly to combine. Cook, stirring constantly, for 1 minute.
Add remaining ingredients and bring mixture to a boil. Reduce heat to low and cook until mixture thickens and flavors blend, usually 2-3 minutes.
Return chicken to skillet and cook until heated through.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

I thought this came out great. Have made it several times. The only change is that I bake the chicken. 350 for 25 minutes or until done. Sauce also comes out great. I took Valeries advice on the sauce changes.

This recipe was delicious! A couple of tips: use toothpicks or skewers to close the pocket after it is stuffed with the gorgonzola; the sauce is a little thick using the amount of flour called for so either add additional chicken broth or reduce the amount of flour a little (by maybe a quarter). The flavor was great and it was very visually appealing. I am not sure what went wrong for the other reviewer but there was nothing unappealing about this - it smelled great and the sauce was a lovely rich color (not pink!).

This was absolutely the worst chicken recipe that I have ever had the misfortune to make (and try to eat). The only thing worse than the way this looked is the way it smelled. The particular ingredients do not compliment each other when prepared and the smell is absolutely awful and permeates everything. (4 hours later my entire first floor still reeks from this.) It doesn't look all that spectacular either. Imagine a chicken breast covered with a pink/purple slimy gelatinous mess that is so bizarre in texture that it slides right off the chicken. I wonder if the original poster ever actually made this. Do yourself a favor and move on to some other recipe.
