ingredients
3 ounces baking chocolate
1 cup sugar
3/4 cup flour
3/4 cup low-fat cottage cheese
3 eggs
1 teaspoon vanilla extract
1/4 teaspoon salt
powdered sugar
directions
Preheat oven to 350 degrees F.
Over very low heat, melt the chocolate and let cool slightly.
In a food processor, puree cottage cheese and all other ingredients, except chocolate and powdered sugar until smooth. Add melted chocolate and blend well.
Pour into lightly buttered 8 inch square baking pan. Bake for 20 minutes or until just set. Sprinkle with powdered sugar and cut into squares.
