ingredients
1/4 cup sugar
3/4 cup sugar substitute
1/3 cup margarine
1 egg
2 egg whites
1 teaspoon baking soda
2 cups flour
4 tablespoons milk
3/4 teaspoon vinegar
3 bananas, ripe, mashed
directions
Blend sugar, sugar substitute, and margarine. Add eggs and mix well.
Sift flour and soda into bowl and stir. Mix milk and vinegar together, then add to mixture. Fold in bananas.
Bake for 1 hour at 350 degrees F in a greased 9" x 5" loaf pan. Let cool and cut into slices.

why would you use all purpose flour, when they have invented self-rising?
Self-rising flour has baking powder, baking soda, and salt already in it. It works fine in some recipes that are created specifically to use it but when you want to control the ingredients (such as in a diabetic recipe) it's best to use all-purpose flour and add the needed ingredients to it.
