It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


2 3/4 cups flour
2 teaspoons baking soda
3/4 cup butter, softened
1 1/2 cup sugar
1/2 cup mashed tofu
2 1/2 cups mashed ripe bananas
1/2 cup nonfat plain yogurt
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F. Spray two 9x5 inch loaf pans with cooking spray.
Into a small bowl, sift together flour and baking soda; set aside. In a large bowl, beat butter and sugar with an electric mixer until light and creamy. Add tofu, bananas, yogurt and vanilla and beat until smooth. Add flour mixture to banana mixture and beat until combined, about 1 minute.
Pour batter into prepared pans and bake about 60 minutes or until wooden pick inserted into loaf comes out clean. Cool in pan for 10 minutes, then turn out onto wire racks to finish cooling.
Tofu replaces eggs in this recipe, reducing cholesterol considerably.
