Roast Pork Tenderloin With Soy And Mandarin Oranges

ingredients
1 cup soy sauce
1/2 cup sesame oil
1 tablespoon fresh ginger, grated
1 tablespoon garlic, minced
1/2 bunch scallions, cut on a bias
2 cans (small) mandarin oranges, saving juice
3 pounds boneless roast pork tenderloin, trimmed
directions
Combine all of the ingredients except for the pork and half of mandarin oranges in a mixing bowl. Add pork and marinate for 4-6 hours or overnight.
Pre-heat oven to 350 degrees F. Place pork in a roasting pan with the remaining marinade. Roast uncovered until the roast is firm and the internal temperature reaches 165 degrees F, about 1 hour. Remove pork from the pan and let rest for 10 minutes.
Slice the pork thin and plate. Garnish with the remaining mandarin orange segments and pork juices from the roasting pan.
