ingredients
1 package (16 ounce size) curly wide egg noodles, cooked as directed, drained but reserve
1/4 cup cooking pasta water
salt
2 tablespoons chopped walnuts, toasted
3 tablespoons olive or salad oil
1 chopped onion
2 tablespoons flour
1/8 teaspoon black pepper
1 teaspoon salt
2 1/2 cups milk
1 package (10 ounce size) frozen chopped spinach, thawed, drained and squeezed dry
1/3 cup grated Parmesan cheese
additional grated Parmesan cheese
directions
In a skillet, heat oil and cook onion until tender but not brown. Stir in flour, pepper and salt; cook for 1 minute. Gradually add milk and cook, stirring until mixture thickens and is smooth. Stir in spinach, cheese, reserved pasta water. Stir in noodles; heat through. Sprinkle with nuts and additional cheese for garnish.
