These aren't overly sweet like some waffles so they can work in both sweet and savory applications. Top them with fruit and syrup, or serve them for dinner topped with fried chicken!

1 3/4 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup ricotta cheese
2 large eggs
1 1/4 cup milk
4 tablespoons butter, melted
Preheat your waffle iron.
In a medium bowl, whisk together the flour, powder, baking soda, and salt to combine.
In a large bowl, beat the ricotta for 1 full minute with a mixer. It won't be completely smooth. Add the eggs and beat for another full minute. When it is smooth and shiny looking, add the milk.
Place the dry ingredients into the bowl with the cheese mixture and gently whisk to combine. Stir in the butter.
Prepare according to your waffle iron manufacturer's directions. Remove the ricotta waffles from the iron when cooked and serve warm with any desired toppings.

Terrific recipe! I subbed in half whole wheat flour, traded coconut oil for the butter, and added a little brown sugar and vanilla. Yum!
