Hawaiian Waffles With Pineapple And Coconut

2 large egg whites
1 1/4 cup all-purpose flour
1/2 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg yolk
1 cup sour cream
1/4 cup unsweetened coconut milk
3/4 cup chopped fresh pineapple
5 tablespoons unsalted butter, melted
sliced bananas, for serving
maple syrup, for serving

directions

Lightly grease a waffle maker and heat as directed by the manufacturer.

Add the egg whites to a bowl and beat on medium speed with an electric mixer until stiff and dry. Set aside.

In another bowl, sift together the flour, sugar, baking powder, baking soda, and salt.

In another bowl, combine the egg yolk, sour cream, coconut milk, pineapple, and melted butter. Mix until completely combined. Stir the flour mixture into the pineapple mixture. Fold in the beaten egg whites.

Using a ladle or large spoon, add the mixture in batches to the waffle iron (amount will depend on the size of your waffle maker - consult owners manual if needed). Cook until the waffles are golden brown. Repeat with remaining waffle batter.

Serve the Hawaiian waffles hot with sliced bananas and maple syrup.
