Fresh Plum and Pecan Waffles

You'll be plum crazy when the sweet aromas of brown sugar and maple syrup fill the air. The nutty burst of pecans, with the succulent topping of plums, deems this waffle irresistible.

ingredients

3/4 cup coarsely chopped pecans, divided
1 1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons brown sugar
1 1/2 cup milk
2 large eggs
1 teaspoon vanilla extract
3 tablespoons unsalted butter, melted
1 cup diced fresh plums (any variety), plus additional sliced plums, for serving
maple syrup, for serving

directions

Preheat oven to 325 degrees F. Preheat waffle iron.

Spread pecans on a baking sheet in a single layer and toast in oven just until lightly browned and aromatic. Spread pecans on parchment or wax paper and cool.

In a large bowl, combine flour, baking powder, salt and brown sugar.

In a small bowl, beat milk, eggs and vanilla. Whisk half of egg mixture into flour mixture, then whisk in remaining egg mixture (do not over-mix). Stir in butter. Fold in diced plums and 1/2 cup of toasted pecans.

Spoon batter onto a preheated greased or non-stick waffle iron. Bake until golden brown.

Serve with maple syrup. Garnish with fresh sliced plums and remaining toasted pecans.
