It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Reminiscent of the popular ice cream dessert, these fluffy waffles have the banana baked right in. Top with the traditional banana split toppings (you can even add a dollop of ice cream if you wish)

2 cups self-rising flour
2 large eggs, separated
2 cups milk
1/4 cup butter
1/2 cup sugar
1 teaspoon vanilla extract
2 bananas, peeled and mashed
Melt butter in 2 qt. measuring cup. Add sugar and stir. Add vanilla and stir. Add milk a little at a time, stirring.
Separate eggs, putting egg whites in small bowl and egg yolks in another. Beat egg yolks and add to mixture. Whip egg whites until stiff and set aside.
Add flour to mixture a little at a time until desired consistency. Mash bananas and add to mixture. Fold egg whites into mixture.
Pour small amount into hot waffle iron (cover iron). When done, top with fresh sliced strawberries, whipped cream and chopped pecans.
Serve the banana split waffles with melted butter and syrup.
