Slow Cooker Meatloaf And Potatoes

ingredients
2 pounds ground chuck
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1/2 teaspoon salt
1 cup cracker crumbs or plain bread crumbs
1 egg
1 packet (.125 ounce size) brown gravy mix
1 cup milk
6 small red potatoes, cubed
directions
Mix all ingredients, except potatoes, in large bowl. Shape into a loaf.
Place in stoneware. Place potatoes at the sides of loaf. (If potatoes are peeled, wrap in foil to keep from darkening).
Cover and cook on LOW 8 to 10 hours. (High 4 to 5 hours, but low is recommended.)

This was a complete dinner with the potatoes cooked in with it. They got very flavorful from the meat juices. I will make this again for sure as the entire family enjoyed it which is always a challenge.

My go-to recipe for crock pot meatloaf. Super easy and has a good meatloaf texture (you can slice it and it doesn't fall apart).
This seems a little worrisome to me........is there enough moisture in the potatoes and meat where it won't burn on low? Just sounded good so am trying it.....mixed everything together instead of putting mustard, ketchup, and brown sugar on top.......also used 2/3 Heinz 57 and 1/3 Heinz ketchip...we'll see what happens...
Assuming you don't have one of the newer (awful) crockpots (by a certain manufacturer that starts with "R") you'll see that the crock rarely needs additional liquid
