ingredients
1 1/2 pound lean ground beef
2 eggs, beaten
1 slice bread, torn into small pieces
1/4 cup chopped onion
1/4 cup chili sauce
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1 package (10 ounce size) frozen chopped spinach, thawed, well drained
3/4 cup shredded monterey jack cheese
directions
In medium bowl blend ground beef, eggs, bread, onion, chili sauce, thyme and salt. On foil or wax paper form meat mixture into 12x8-inch rectangle. Spread spinach over meat, leaving 1 inch around edges.
Sprinkle cheese over spinach. Roll jelly roll style starting with short end. Press seam and ends to seal. Place roll in ungreased 9x5-inch loaf pan.
Bake in 325 degrees F convection oven, 1 to 1 1/4 hours (or bake in preheated 350 degrees F radiant bake oven, 1 to 1 1/4 hours), or until loaf is brown and completely set.
Remove from pan. Let loaf stand 5 to 10 minutes before slicing/cutting (should favor jelly roll look).

This recipe was ok. I liked the jelly roll effect. It was a little bland though. Maybe instead of the chili sauce, some spicy salsa? Or just some more herbs and seasonings mixed in with the beef? It was very easy to make though so I think I will experiment to see if I can jazz it up a bit.
