This meatloaf recipe uses matzo instead of breadcrumbs or oats. Perfect for Passover or anytime you're craving delicious meatloaf.

Meatloaf

2 pounds ground beef
1 onion, grated
1 cup matzo farfel (or matzo broken into pieces)
1 teaspoon salt
1/8 teaspoon black pepper
2 eggs, slightly beaten
1/2 cup water

Topping

1 can tomato sauce with mushrooms
1/4 cup lemon juice
1/4 cup sugar

directions

Mix all loaf ingredients together. Put into a teflon or greased loaf pan.

Mix the topping ingredients. Pour on top of the meatloaf.

Cook for 1 hour at 350 degrees F.
