Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.

A new twist on stuffed peppers! In this version, bell pepper rings are filled with a tasty meatloaf mixture, browned in a pan, then baked until cooked through.

1 green bell pepper
1 red bell pepper
1 yellow bell pepper
1 pound ground beef
2 slices white bread, cubed
OR
15 saltine crackers
2 cloves garlic, minced
1 egg
1 small onion, chopped
1 dash Worcestershire sauce
1 dash hot sauce
salt and freshly ground black pepper
1 tablespoon oil
vegetable oil, for frying
ketchup or tomato sauce
Preheat oven to 400 degrees F.
Remove core and seeds from peppers. Slice into 1 inch rings and place on nonstick baking sheet. You should get about 3 rings per pepper.
In a large bowl, mix together beef, bread or crackers, garlic, egg, onion, Worcestershire sauce, hot sauce, and season with salt and pepper. Press meatloaf mixture evenly into pepper rings.
In a skillet over medium-high heat, add oil. Saute meatloaf rings on both sides until golden brown, about 5 minutes per side.
Transfer the meatloaf rings to a baking sheet. Add your ketchup or tomato sauce on top of your meatloaf rings and bake until cooked through, 20-25 minutes.

Looks like a very attractive and delicious way to make meatloaf . Will definitely try , perhaps with brown or white rice for a starch .

I used my own meatloaf recipe but borrowed the pepper ring idea from this one. I have never considered meatloaf to be "elegant" but this way made it seem like a fancy dish. Very creative idea - thank you for sharing it.

What a fun recipe! Try to get your peppers in uniform sizes so all the rings of meatloaf will cook evenly. We had just enough meatloaf to fill all of the pepper rings. They turned out delicious!
