2 pounds ground beef
1 onion, finely chopped
1 cup bread crumbs
1 1/2 cup ketchup
2 eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
4 cups warm mashed potatoes
8 cherry tomatoes, halved
parsley sprigs
directions
Preheat oven to 375 degrees F. Grease a Bundt or tube pan.
In a large bowl, combine the raw ground beef, onion, bread crumbs, 1 cup of the ketchup, the eggs, salt and pepper; mix well. Place in the greased pan and spread remaining ketchup over the top. Bake for 1 to 1 1/4 hours, or until the juices run clear. Drain off fat.
Let sit for 5 minutes, then transfer to a serving platter. "Frost" the meat loaf with mashed potatoes and garnish the bottom edge with cut cherry tomatoes and top with parsley sprigs.
