Meatloaf is a great way to feed a small group of people without having to make a lot of food. This recipe makes enough for two people, and can easily be doubled or tripled if you need to feed more.

1/2 pound ground beef
2 tablespoons finely grated carrots
2 tablespoons finely diced celery
1/4 cup finely diced onion
1/4 cup finely diced green bell pepper
1/4 cup tomato juice
salt to taste
black pepper to taste
garlic powder to taste
Preheat the oven to 350 degrees F.
Combine the ground beef, carrots, celery, onion, bell pepper, tomato juice, salt, pepper, and garlic powder in a bowl. Mix just until combined (do not over work the meat).
Form the meat mixture into a loaf shape and place in a small loaf pan or place in the center of a baking dish.
Place the meatloaf in the oven and bake at 350 degrees F for 45 minutes or until cooked through.
Drain off the grease. Let the meatloaf cool for 5-10 minutes then slice and serve.
Before baking, add a slathering of barbecue sauce, tomato sauce, ketchup, gravy, or other sauce on top of the meatloaf. Bake as directed.
