Meat Loaf For 50 People

ingredients
1 1/4 pound stale bread, soft
water
9 pounds ground beef
1 pound ground pork
2 eggs, beaten
1/2 teaspoon black pepper
4 1/4 teaspoons salt
1 cup stock (consomme or beef broth)
1 pound onions, chopped
directions
Tear or cut bread in large pieces, add water and soak bread. Place in colander to drain, press out excess moisture. Discard water. Mix all remaining ingredients.
Place in 5 greased 9 x 5 loaf pans or other appropriate casserole dishes, and bake at 300 degrees F for 2 hours.
Serve 50 - 3 oz. portions or 75 - 2 oz. portions.

I never thought I would ever need to prepare a recipe for 50, but never say never....right? My sunday school class volunteered to prepare the Wednesday night prayer supper. I started searching on CD Kitchen for recipes that could easily be made for a crowd. Came across this one and we tripled the recipe. It was perfect! Nice blend of ingredients and adding pork in made it wonderful. Our local grocery store ground the meats for us special which was helpful. This is an awesome recipe for a crowd.
