ingredients
2 1/2 pounds lean ground beef
3/4 pound lean ground pork
3 extra large eggs, lightly beaten
3/4 cup diced onions
3/4 cup diced celery
1/2 cup diced green bell pepper
2/3 cup tomato juice
1/3 cup evaporated milk
1/4 cup saltine crumbs
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
directions
Heat oven to 350 degrees F. Lightly grease a large, shallow meatloaf pan, or a large shallow baking pan.
In a large bowl, combine all of the ingredients, mixing well. Firmly shape the meat into a 7x3x3" loaf and place in the pan. Cover loosely with foil.
Bake 1 hour. Remove foil and continue baking for 5 minutes.
For easy slicing, let the meat loaf stand at room temperature for 10 minutes.
