Extra lean ground beef, low fat/low sodium beef broth, and whole wheat bread make this meatloaf a healthier choice. It's also packed full of onions, celery, and carrots!
2 slices whole wheat bread, finely crumbled
2 medium eggs, beaten slightly
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup grated carrots
2 teaspoons Worcestershire sauce
1 teaspoon dry mustard
1 pound extra lean ground beef
1/2 cup low-fat, low-sodium beef broth
freshly ground black pepper, to taste
1 tablespoon ketchup
Preheat the oven to 350 degrees F. Line a 8 x 8-inch baking pan or 8x4x2-inch loaf pan with foil.
Combine the bread crumbs, eggs, onion, celery, carrots, Worcestershire sauce, and dry mustard in a large bowl and mix well. Slowly mix in the beef and beef broth and then set aside for a few minutes.
Place the meatloaf in the baking pan and pat down so it fits evenly in the pan. Sprinkle with the black pepper and spread the ketchup over the top.
Cover the pan with foil and bake for 45 minutes at 350 degrees F. Remove the foil and bake for another 30 minutes. Let stand for 5 minutes before slicing.

Tweaked it a bit: 1 pound extra lean ground beef 1 cup oatmeal approximate veggie measures: 1/2 pkg chopped mushrooms 1/2 cup finely chopped onion 5 chopped celery stalks 3 chopped carrots 2 teaspoons Worcestershire sauce 1 teaspoon dijon mustard 1 tablespoon ketchup 1 teaspoon garlic powder 1 teaspoon salt, and 1/2 teaspoon ground black pepper. It was delicious!!!!! Also, much healthier than my recipe (though it is my mother's and amazing).

I very much liked the amount of vegetables in this as I believe it gave it a softer texture and wasn't as dry as some recipes calling for extra lean ground beef. I will definitely make this again.

Good texture. I used steel ground oats, not bread. Would like the nutritionaal evaluation.

For being a healthier version of meatloaf, this recipe was quite good! I really liked that it was packed full of veggies. It had good texture and held together pretty well for easy slicing.
