Finnish Meat Loaf

ingredients
4 tablespoons butter
1 cup chopped mushrooms
1/2 cup chopped onion
1 1/2 pound ground beef
1/2 pound ground pork
1/2 pound ground veal
1/2 pound ground ham
1/4 cup minced parsley
freshly ground black pepper, to taste
1 cup grated Gruyere cheese
1/2 cup heavy cream or milk
sour cream, optional
directions
Preheat oven to 350 degrees F.
Saute chopped mushrooms and onion in the butter over medium heat until the onion is soft, about 5 minutes. Add the cooked mixture to the remaining ingredients, reserving 1/4 cup of the cheese for the top. Mix together and press into a 9- by 5-inch loaf pan. Sprinkle the top with reserved cheese.
Bake meatloaf for 1 hour. Let rest for about 10 minutes, slice and serve with a dollop of sour cream.

A great low carb meatloaf. Iâve made it for years. Family favorite. When I donât have gruyere I use Swiss.

I made this meatloaf for my husband and boys one Sunday. I don't eat meat but they are carnivores and with this recipe having 4 different types of meat I thought surely this will meet with their approval. You could have heard a pin drop during dinner. There were no leftovers.
