Meatloaf is a dish with great versatility. It can be served with mashed potatoes, made into sandwiches, or simply eaten alone. This recipe is an example of the classic American style meatloaf - moist and savory, not too spicy or sweet. Perfect for any occasion.
3 tablespoons butter
2 cups finely chopped onion
1 bell pepper, seeded and finely chopped
1 stalk celery, finely chopped
2 pounds ground beef
1 teaspoon dried thyme
1/2 cup uncooked rolled oats
2/3 cup ketchup
2 eggs, beaten
2 teaspoons salt
1 1/2 teaspoon black pepper
4 slices bacon, halved crosswise
Preheat the oven to 350 degrees F.
Melt the butter in a skillet over medium heat. Add the onion, bell pepper, and celery. Cook, stirring frequently, until the vegetables are soft (about 6-7 minutes). Remove the pan from the heat.
Combine the ground beef, cooked vegetables, thyme, oats, half of the ketchup, the egg, salt, and pepper. Mix well. Form into a loaf and set in a shallow baking dish.
Spread the remaining ketchup over the meatloaf. Lay the slices of bacon over the top of the meatloaf.
Place the baking dish in the oven and bake at 350 degrees F for 1 1/4 hours or until cooked through.
Let the meatloaf stand for 10 minutes before slicing and serving.
