Slow Cooker Cheddar Cheese Meat Loaf

ingredients
1/4 cup crushed cheese crackers (Cheese-Its)
1 small onion, finely chopped
2 tablespoons minced green bell pepper
1/4 cup chili sauce
1/2 cup milk
2 eggs, beaten slightly
1/2 teaspoon salt
1/8 teaspoon black pepper
1 1/2 pound ground beef
1 cup shredded cheddar cheese
directions
In large bowl, combine cracker crumbs, onion, bell pepper, chili sauce, milk, eggs, salt, pepper, ground beef and cheese.
Form into a 6 or 7 inch round loaf, flattened a little on the top. Lightly spray bottom of crockpot with cooking spray. Add loaf to crockpot. Cover and cook on LOW about 5 hours.

I love the flavor that the cheese crackers and chili sauce give this meatloaf. I adjusted the serving size and made this for a church dinner for 50 people. It was a big hit!!!
