non-stick cooking spray
1/2 teaspoon aniseeds
1 cup finely chopped onion
1/2 cup port or other sweet red wine
1/2 cup chopped pitted prunes
1 tablespoon Dijon mustard
3/4 teaspoon salt
1/4 teaspoon black pepper
2 slices (1 ounce size) pumpernickel bread, torn into small pieces
1 1/2 pound lean ground pork
Preheat oven to 375 degrees F. Heat a small cooking spray-coated pot over medium heat.
Saute aniseeds 1 minute, add onions and cook 3 minutes. Mix in wine and prunes and let boil 3 minutes, stirring frequently.
Add aniseed mixture, mustard, salt, pepper, and bread to a large bowl and combine well. Let mixture rest until cooled.
Combine pork with aniseed mixture and blend well. Arrange mixture in a 9 x 4 inch cooking spray coated loaf pan. Bake 1 hour or until a meat thermometer reads 160 degrees F. Let rest 10 minutes before slicing.

I forgot to add to the review above that I tried 1 lb ground turkey plus 1/2 lb pork sausage to make it a little bit less fattening.. (i think)

Okie dokey:: I tried this for dinner tonite... very interesting.. I'd have to say it's good! Recipe works out nicely.. meatloaf stays nice and compact while not using any egg or milk to combine ingredience together. Instead of a loaf pan I just made a free form loaf in a 9x13 glass dish greased with veg oil. I like this and will make it again.
