1 pound ground eye of round beef
2 cups instant long grain white rice
1 jar (16 ounce size) salsa
2 cups vegetable juice
1 bag (16 ounce size) coleslaw mix (cabbage and carrots)
2 cans (14 1/2 ounce size) stewed tomatoes
directions
Spray crock pot with nonfat cooking spray. In cooker, mix together the beef, rice, salsa, vegetable juice, and coleslaw (Remove large pieces of cabbage). Cover and cook on high for 4 hours.
When ready to serve, heat stewed tomatoes in microwave until they are heated through. Evenly pour tomatoes over each serving.
