Ground Beef And Tomatillos

ingredients
2 cups boiling water
1 cup long grain white rice
1 tablespoon olive oil
1/4 cup chopped onion
1 pound lean ground beef
4 ounces mushrooms, sliced
4 small tomatillos, chopped
1 can (14.5 ounce size) no-fat, low-sodium chicken broth
2 tablespoons tomato paste
1 1/2 teaspoon chipotle in adobo sauce, chopped
directions
Bring water to a boil, add rice, reduce heat, cover and simmer 15 minutes. Stir to separate grains. Cover and let steam until ground beef mixture is ready.
Meanwhile, in large, heavy skillet, saute onion in olive oil 2 minutes. Stir in ground beef. Cook until lightly browned, about 5 minutes.
Stir in sliced mushrooms and chopped tomatillos and cook over medium heat 1 minute.
Add chicken broth, tomato paste and chipotle. Simmer 5 minutes. Taste for seasoning. If too spicy, add more tomato paste to taste.
