It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


1 1/4 cup uncooked couscous
1 pound ground round (ground beef)
1 1/2 teaspoon ground cinnamon, divided
1 can (14.5 ounce size) diced tomatoes with roasted garlic
1/2 cup raisins
1/4 cup water
1 teaspoon cumin
1/2 teaspoon ground allspice
10 pimiento-stuffed olives, coarsely chopped
3 tablespoons slivered almonds, toasted
Cook couscous according to package directions, omitting salt and fat.
Cook beef in a large nonstick skillet over medium-high heat 3 minutes or until browned, stirring to crumble. Stir in 1 teaspoon cinnamon, tomatoes, and next 5 ingredients.
Bring to a boil, cover, reduce heat, and simmer 10 minutes. Remove from heat, stir in almonds and 1/2 teaspoon cinnamon. Cover and let stand 5 minutes. Serve over couscous.

I found this recipe to be absolutely delicious. I had never added cinnamon to meat before, and I must say that I was impressed. It was sensational. I had all of the ingredients except olives. So, I had to leave them out. The dish was still wonderful. While hard to think it could have been better, I can't wait to try it again with the olives.

While this Cinnamon Beef recipe was cooking it made my mouth water. I love the bold sweet flavor. The raisins compliment the spices perfectly. I found the recipe easy to make and I don't consider myself much of a cook. If you don't have couscous I think you could easily put the meat dish on top of noodles or maybe rice. The leftovers are just as good as the main course too!
