Beef And Potato Moussaka

ingredients
1 pound lean ground beef
1 onion, chopped
1 can (14 ounce size) tomato sauce
1/2 teaspoon salt
1/8 teaspoon nutmeg
1/4 teaspoon black pepper
4 medium potatoes, peeled and cooked
2 eggs
1 1/3 cup milk
1/2 cup grated Parmesan cheese
directions
Brown beef and onion in large saucepan. Add tomato sauce and seasonings. Bring to boil and simmer, covered , for about 20 minutes.
Slice cooked potatoes about 1/4 inch thick; arrange half of them in greased casserole. Cover with meat/tomato sauce mixture and top with rest of potatoes. Beat eggs and milk together and pour over potatoes. Sprinkle with cheese and bake in 350 degrees F oven for about 45 minutes. Let stand for 15 minutes before serving.
Note: you can substitute ground lamb for beef.

A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

This is a great alternative to the longer, more complicated recipe of Moussaka I've tried. Both are tasty but this was quicker and required less ingredients. I would use less salt next time because the cheese and tom. sauce seemed to have plenty. I had been wanting to make it for my husband because he never had it. He loved it! I had to almost sit on him to keep him from eating a 3rd serving!! (he doesn't need that) Plus I am eating it for lunch today and there's plenty leftover for tonight. Great filling meal that provides lunch dinner the next night while I am pregnant.

Took 1 hour and 35 minutes from start to taking out of oven. Used ground lamb. Took this to a potluck & all of it was eaten. Two people asked for the recipe.
