ingredients
BEEF
1 pound lean ground beef
1/4 cup shredded zucchini
1/4 cup seasoned bread crumbs
ADDITIONAL INGREDIENTS
2 1/2 cups sliced zucchini
1 can (14.5 ounce size) pizza-style tomatoes
1 can (16 ounce size) small white potatoes, drained
directions
Mix beef patties ingredients and form into 1/2" thick patties.
Brown on both sides in a large nonstick skillet for 3-4 minutes.
Stir in zucchini and tomatoes. Bring to a boil, reduce heat, cover and simmer 7-9 minutes, turning patties and stirring 2-3 times, until zucchini is crisp-tender.
Add potatoes and simmer 3 minutes longer, or until patties are no longer pink in center.
