Calabaza With Chicken And Corn

ingredients
4 cups peeled and sliced yellow squash or zucchini
1 small can tomato sauce or paste
2 tablespoons oil
4 chicken breast halves or any type of chicken parts
2 tablespoons garlic powder
3 tablespoons cumin
2 teaspoons black pepper
2 teaspoons salt
6 cups water (more if needed)
1 small can corn
directions
In a Dutch oven, heat the oil and put in chicken to precook or just to brown. Add seasonings; stir.
Add the squash and corn. Add tomato sauce; stir. Add water, enough to cover all. Cook on medium heat, bring to boil and let some juice evaporate, about 30-40 minutes.
Serve and eat with warmed up corn tortillas.

Great recipe and easy to make. This reminds me of my grandma's recipe. I served it with a scoop of refried beans in the bowl. Yum!
