Cutting down on sugar and fat doesn't mean you have to miss out on BBQ. Lean chicken is cooked in a smoky BBQ sauce making it perfect on buns, in tortillas, or on its own.

4 boneless, skinless chicken breast halves
1 can (12 ounce size) diet cola
1 cup ketchup (look for a lower sugar version)
1/2 teaspoon minced garlic, optional
3 drops Liquid Smoke, optional
4 low fat hamburger buns
Heat a non-stick skillet coated with cooking spray over medium heat. Add the chicken and cook on both sides until browned. Add the cola, ketchup, garlic, and liquid smoke. Bring the liquid to a boil then reduce the heat to a simmer. Cover the skillet and cook for 30-40 minutes or until the chicken is tender and the sauce has thickened.
Remove the chicken from the pan and place on a cutting board or platter. Shred the chicken using two forks (or chop it finely). Return the chicken to the skillet and stir it to coat it in the sauce. Serve immediately on buns.

Love buffalo wings? Get that same hot, zippy flavor in everything from deviled eggs to enchiladas. And of course: wings.
Beer makes batters better, meat more tender, and sauces more flavorful.

I serve this on low carb whole wheat tortillas and use low sugar ketchup. It's really good. It's not too sweet from the cola either.
