Chicken sandwiches are a classic, but the standard tomato-lettuce-mayo topping gets old after a while. These Greek-style subs with creamy feta and cool cucumbers stacked up on a French roll are a sure thing to cure boring sandwich syndrome.

ingredients

2 small grilled chicken breasts
1/4 cup mayonnaise
1 1/2 teaspoon garlic, minced
2 French-style sandwich rolls, sliced lengthwise
4 slices tomato
2 slices red onion
1/4 cucumber, sliced
2 tablespoons crumbled feta cheese

directions

Thinly slice the grilled chicken and set aside.

In a bowl, stir together the mayonnaise and garlic. Spread the mayo mixture on the inside of the sandwich rolls.

Layer the chicken, tomato, red onion, feta, lettuce, and cucumber on the bottom of the roll. Cut into serving pieces and serve immediately.

recipe tips

Grill the chicken until it's fully cooked and has nice grill marks.

Mix the mayonnaise and garlic well to make sure the garlic flavor is evenly distributed.

Layer the ingredients evenly for a balanced flavor in every bite.

Slice the cucumber thinly for a better sandwich texture.

Crumbled feta cheese adds a tangy, salty flavor that complements the other ingredients.

Press the sandwich slightly after assembling to help the ingredients meld together.

Serve the sandwich immediately after assembling for the best taste and texture.

Experiment with adding different herbs to the mayonnaise mixture for variety.

For a lighter version, use less mayonnaise or substitute it with a low-fat version.

common recipe questions

Can I use a different type of bread for this sandwich?

Yes, you can use any type of hoagie roll, ciabatta, or even pita bread as an alternative to French-style sandwich rolls.

What can I use instead of mayonnaise?

You can use Greek yogurt or tzatziki sauce as a healthier alternative to mayonnaise.

How can I make this sandwich vegetarian?

Replace the chicken with grilled vegetables like zucchini, bell peppers, or portobello mushrooms for a vegetarian version.

Is there a substitute for feta cheese?

You can use goat cheese or mozzarella as a substitute, though it will change the flavor.

Can I prepare this sandwich in advance?

It's best to assemble the sandwich just before serving to prevent the bread from becoming soggy.

How can I add more flavor to the chicken?

Marinate the chicken in olive oil, lemon juice, and Greek herbs before grilling for added flavor.

What are some additional toppings I can add?

Olives, pepperoncini, or a sprinkle of oregano can bring out the Greek flavors of the sandwich.

Yes, toasting the bread adds a nice "bite" to the sandwich and helps prevent it from getting soggy.

How do I store leftovers?

Wrap the sandwich tightly in plastic wrap or aluminum foil and store in the refrigerator for up to a day.

What side dishes pair well with this sandwich?

Greek salad, potato chips, or a light cucumber salad would complement this sandwich well.

tools needed

Grill or Grill Pan: For grilling the chicken breasts to achieve a nice char and flavor. A grill pan can be used on the stovetop if an outdoor grill is not available.

Measuring Cups and Spoons: For measuring ingredients such as mayonnaise and feta cheese.

Cutting Board: A flat surface for slicing the grilled chicken, vegetables, and sandwich rolls.

Sharp Kitchen Knife: For thinly slicing the grilled chicken, tomatoes, red onion, and cucumber.

Mixing Bowl: To combine the mayonnaise and minced garlic, creating the spread for the sandwich.

Spatula or Butter Knife: For spreading the mayonnaise mixture onto the sandwich rolls evenly.

what goes with it?

Tzatziki Sauce: This yogurt-based sauce with cucumber and herbs would provide a refreshing contrast to the richness of the chicken and the creaminess of the feta. It enhances the Mediterranean flavors while adding a cool element (replace the mayonnaise/garlic mixture with the tzatziki sauce).

Greek Salad: A side of Greek salad made with tomatoes, cucumbers, olives, and red onion complements the sandwich's ingredients well. It adds a freshness that balances the sandwich.

Pita Chips: Crunchy pita chips offer a nice texture alongside the soft hoagie. They can be served with hummus for dipping, adding to the Mediterranean experience.

Roasted Red Peppers: Adding roasted red peppers into the sandwich can introduce a smoky sweetness.

Olive Tapenade: A spread of olive tapenade can add an earthy tanginess that pairs well with the chicken and feta, providing an extra layer of flavor.

Pickled Red Onions: The acidity and crunch of pickled red onions can brighten the sandwich and cut through its richness, enhancing your palate. Use them instead of fresh red onion.

Roasted Garlic Hummus: Served alongside the sandwich, this creamy dip adds a nutty flavor that pairs nicely with the garlic mayo, giving a harmonious garlic-forward note. Gourmet tip: use the hummus as a spread in place of the mayo mixture!

Crispy Potatoes: A side of crispy potatoes, perhaps seasoned with oregano, provides a contrast in texture and a satisfying starch that rounds out the meal nicely.

beverage pairings

Wine Pairings
Sauvignon Blanc: This white wine is zesty and fresh, which makes it a perfect match for the creamy feta and cool cucumber. Look for one that's bright and citrusy with notes of green apple or tropical fruits to complement the flavors of the sandwich.

Chardonnay: A lightly oaked Chardonnay offers a buttery texture that pairs well with the richness of the mayo and feta. Aim for one that has subtle hints of vanilla and oak but isn't too heavy, so it doesn't overpower the other flavors.

Rose: A dry rose brings berry flavors and a refreshing quality that works nicely with the grilled chicken and fresh veggies.

Other Alcohol Pairings
Lager: A crisp and clean lager is a classic go-to for chicken sandwiches. Its lightness won't compete with the sandwich's flavors.

Gin and Tonic: A gin and tonic, with its herbal notes and refreshing bubbles, matches well with the Mediterranean vibes of these hoagies. Look for a gin that's balanced and not overly floral for the best fit.

Pilsner: A fruity and slightly hoppy pilsner could provide a nice contrast to the tangy feta and cool cucumber. Its lighter body complements the dish without overshadowing the flavors.

Non-Alcoholic Pairings
Sparkling Water: Plain or flavored sparkling water adds that lively fizz which can lighten up the whole sandwich experience.

Minted Lemonade: A mint-infused lemonade provides a refreshing twist to your meal, with mint echoing the freshness of the cucumber while the lemon cuts through the richness of the mayo.

Herbal Iced Tea: A lightly brewed herbal iced tea, especially with mint or chamomile, can enhance the flavors of the chicken and vegetables, offering an aromatic accompaniment without any overbearing sweetness.

  1. momalicious REVIEW:

We loved this Greek style 'sub'! For us, I lightly grilled the insides of the French bread, & made a traditional Tsziziki (sp.?) sauce. I spread it on the inside of the grilled French bread. I also added a couple of leaves of crunchy Baby Romaine Lettuce, and instead of tomato, I used (drained & blotted) Roasted Red Peppers in oil. Before putting the top on the sandwich, I sprinkled it VERY lightly with Greek Seasoning. It was seriously delicious, so thanks for the inspiration.
