Warm Snow Pea Salad With Mushrooms And Goat Cheese

ingredients
2 teaspoons olive oil
1/2 pound mushrooms, thinly sliced
2 cloves garlic, minced
1 pound snow peas, strings removed
1 small red bell pepper, cut into 2 x 1/4-inch strips
1/2 teaspoon salt
3 tablespoons rice vinegar
2 teaspoons honey
4 cups watercress leaves
4 ounces mild goat cheese
2 tablespoons pecans, toasted and chopped
directions
In a large nonstick skillet, heat half of the oil over moderately high heat. Add the mushrooms and saute for 4 minutes or until tender and lightly browned. Add the garlic and cook for 1 minute. Add the snow peas, bell pepper, and salt, and saute for 4 minutes or until crisp-tender. Transfer to a large bowl and add the vinegar, honey, and the remaining oil, tossing to combine.
Let stand for 20 minutes before serving. Divide the watercress among individual salad plates and top with the snow pea mixture. Sprinkle with the goat cheese and pecans.
