Stir-fried sprouts are one of the absolute easiest sides to throw together for a meal with an Asian flair. Garlic and red pepper flakes give the sprouts a pop of flavor while keeping them subtle enough to go with any sort of seared meat or seafood.

ingredients
1 pound fresh mung bean sprouts 1 tablespoon canola oil 3 green onions, cut into 1-inch slices 1 clove garlic, minced 1/2 teaspoon brown sugar salt to taste crushed red pepper flakes or soy sauce
directions
Rinse the bean sprouts well then dry well with paper towels. Set aside.
Heat the oil in a wok or skillet over high heat. Add the green onions and garlic and quickly stir-fry for a few seconds.
Add the bean sprouts and stir-fry for one minute.
Add the brown sugar and salt and mix well. Add crushed red pepper or soy sauce if desired. Serve hot.

This recipe seems to be very similar to what you used to be able to get from any classic Chinese-American take out place, except with those it was Pork with Bean Sprouts. You can't find it easily these days in those types of places here in my neighborhood. It's a fairly bland dish with small strips or as they call it shredded pork. And the pork was lean not fatty. All stir fried together with minimal oil. It used to be what I'd order when watching my weight. I bet adding the pork first to the pan/wok and giving it a two minute fry, before adding the rest of the ingredients for the one minute called for in this recipe and you'd have the same dish. Or you could do it with chicken strips as well.
