4 cakes hard yellow bean curd
oil (for deep frying)
1/4 cup dark soy sauce
1 clove garlic
1 teaspoon sambal ulek
OR
1 fresh red chili (seeded and chopped)
1 onion (roughly chopped)
1 tablespoon palm sugar (or substitute)
4 spring onions (finely sliced)
4 ounces fresh bean sprouts
Wipe bean curd thoroughly on paper towels. Cut each cake of bean curd into 9 dice and fry in hot oil, taking care not to break the curd, until browned on all sides.
Drain on paper, then arrange on dish. Spread washed and drained bean sprouts over, then garnish with the spring onions.
Spoon over the sauce and serve.
SAUCE: In container of electric blender put the soy sauce, sugar, onion, chilli or sambal and garlic. Blend until smooth.
