Sirloin With Peppers And Eggplant

ingredients
1 Japanese or regular eggplant (about 0.5 pound size)
1/2 pound bottled roasted red bell peppers, finely chopped
2 cloves garlic, minced
2 tablespoons cilantro or parsley, chopped
1/4 cup balsamic vinegar
4 sirloin steaks, about .25 pound each
2 tablespoons grated Parmesan cheese
directions
Prepare grill or broiler.
Broil eggplant 8-10 minutes, turning occasionally or until skin blisters. Transfer eggplant to a paper bag and close. Set aside 15 minutes.
Peel eggplant and chop finely. Combine eggplant, roasted peppers, garlic, cilantro and vinegar in a bowl and set aside.
Season steaks with salt and pepper to taste. Grill or broil 3-4 minutes per side for medium done meat.
Cut steaks crosswise across the grain into thin slices. Serve with eggplant and pepper sauce. Sprinkle with Parmesan.
