Here's a great summertime trick to keep up your sleeve. Lemonade syrup, ready to be mixed into cold water at a moment's notice for perfect lemonade. Once you have it stocked, you'll start finding uses for a dash here or there in cocktails, too.
6 cups water
5 pounds sugar
2 ounces citric acid
1 ounce tartaric acid
6 lemons, juiced
4 lemons, grated zest
Bring the water to a boil in a heavy saucepan over medium-high heat. Add the sugar, citric acid, and tartaric acid. Mix well.
Add the lemon juice and zest to the boiling sugar water. Let simmer for 4-5 minutes or until the mixture is syrupy.
Remove the pan from the heat. Let the mixture cool then pour into a jar with a lid. Can be stored in the refrigerator for several weeks.
To use, mix the lemonade syrup with water in a ratio of 1 part syrup to 5 parts cold water.
Tartaric acid can easily be purchased online at Amazon or Walmart. Some Walmart stores have it in stock. Grocery stores with a large natural foods section often carry it as well. In this particular recipe there isn't really a good substitute. It is similar to citric acid but it has a stronger flavor so you could in theory use more citric acid in place of it but we haven't tested that with this recipe.
