Super White Sangria

ingredients
1 bottle (750 ml. size) dry white wine, such as Chardonnay
1 can (6 ounce size) frozen lemonade concentrate
1/2 cup light rum
1/2 cup triple sec or other orange-flavored liqueur
1 can (15.25 ounce size) pineapple tidbits packed in natural Juices
1 large apple, diced
2 cups chilled lemon-lime soda, such as 7-Up
strawberries and/or orange slices for garnish, if desired

In a 1-gallon pitcher, combine the wine, frozen lemonade concentrate, rum, Triple Sec and pineapple (with its juices).
Core and dice the apple (in pieces no bigger than the pineapple pieces) and add it to the sangria. Stir well and refrigerate, covered, for at least 2 hours.
Just before serving, stir in the soda pop. Serve over ice, in wine glasses, garnished with fresh strawberries and orange slices if desired.

I made this, with a few small changes, for a party. I was sorry I did not have more. It was very popular. Even the guys drank it. Here were my changes: I didn't use canned pineapple. I used fresh blueberries, nectarines and oranges and soaked the liquor for 24 full hours ahead of time. I also doubled the recipe and used part light rum and part banana rum (which may not be available everywhere-- I bought it in the Carribbean.). It tasted amazing, though. I might make it again just to have in the fridge for warm late summer evening sipping on the porch!

Wonderful refreshing sangria for the summertime. I served it at a Pampered Chef party where everyone wanted the recipe.
