Of all the foods you find bacon wrapped these days, this meatloaf is one that stands out. Great flavor, fantastic texture, and did we mention it's wrapped in bacon?

1 pound ground beef
1 cup bread crumbs
1/2 cup barbecue sauce
2 eggs, slightly beaten
1 teaspoon salt
1 teaspoon black pepper
6 slices bacon, more if needed
Preheat the oven to 375 degrees F.
Combine the ground beef, bread crumbs, barbecue sauce, eggs, salt, and pepper in a large bowl. Mix well but do not overwork the beef. Shape the beef mixture into a loaf shape in a 9x13 baking dish.
Place one slice of bacon over the top of the meatloaf, tucking the ends under the loaf. Repeat with the remaining slices of bacon, covering the top of the meatloaf completely.
Place the baking dish in the oven and bake at 375 degrees F for 1 hour or until cooked through. If the bacon browns too much during the cooking time, cover the meatloaf loosely with foil.
Remove the meatloaf from the oven and let stand for 5-10 minutes before slicing.

Excellent dish! I basted the bacon with additional barbecue sauce while it cooked.

I normally prefer a lower bread crumb to meat ratio but the bacon in this recipe really helped to keep the meatloaf moist. This was definitely one of the best meatloaf recipes we've tested!

Would cut salt out or in half. Bacon adds enough salt for flavor. Kids liked it so it's a repeat recipe for us.

Great recipe. After I put it in the pan, I pushed some cubes of cheddar cheese down into the meat, then put the bacon on top. The effect was like a barbecue bacon cheeseburger. Really good.
