3 tablespoons butter
1 large onion, diced
1 1/2 cup celery, diced
4 medium potatoes, diced
2 tablespoons (heaping) cornstarch
1 cup water
1 can (12 ounce size) evaporated milk
1 1/2 cup cooked salmon
Saute celery and onion in butter until brown. Add potatoes and enough water to cover. Simmer 20 minutes or until potatoes are done.
Stir cornstarch into water and add to mix. Increase heat to thicken. Add milk and salmon and serve when hot.

Too much potato. I'd cut that in half next time. I'd also use half and half or cream instead of the evap milk. It added a less desireable taste. The recipe needs salt and maybe some herbs and garlic as 2hot2cook suggested. Maybe cooking the potatoes in chicken or vegetable broth instead of water would be a good choice too. Lots of little things you can do to tweak it to make it a 5 star recipe.

This was good but just a little on the bland side. I added some garlic salt to it but I would have liked to have sauteed some fresh garlic along with the onion and celery as I think it would have provided a little more depth to the soup.

This is an excellent basic recipe, and since it was "basic" I felt free to tweak it a bit, as follows: 1. One less potato to make it a little lighter. 2. Added 1 tsp. crushed garlic with potatoes. 3. Added 1/3 tsp. white pepper and 10 drops of Sriracha red chili sauce. 4. Garnished with dill and chopped green onions, and dusted with freshly ground black pepper. These little alterations really woke it up!
