The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.

ingredients
1/2 cup softened butter
1/2 cup shortening
8 ounces softened cream cheese
3 1/2 cups sugar
6 eggs
3 cups flour
1/4 teaspoon salt
1/4 teaspoon soda
7 ounces coconut
1 teaspoon vanilla extract
1 teaspoon coconut flavoring
directions
Cream butter, shortening and cream cheese. Gradually add sugar at medium speed. Add eggs, one at a time, beating well with each egg. Combine flour, salt and soda, then gradually add to creamed mixture.
Mix just until blended. Stir in coconut, vanilla and coconut flavoring. Bake in greased and floured or sprayed bundt or tube pan at 325 degrees F for 1 1/2 hours. Cool in pan 10 minutes, then remove.

This was very good and had a nice texture. Made it for a baby shower and put a light blue frosting on it with more coconut sprinkled on top.
