1 cup butter, softened
1/2 cup shortening
3 cups sugar
5 eggs
3 1/2 cups all-purpose flour
1 can (12 ounce size) ginger ale
1 teaspoon vanilla extract
1/2 teaspoon lemon juice

directions

Preheat oven to 325 degrees F. Grease 2 loaf pans.

Combine the butter and shortening in a large mixing bowl. Cream together with an electric mixer. With the mixer running, add the sugar, eggs, flour, ginger ale, vanilla, and lemon juice and mix until well combined.

Pour the batter into greased loaf pans and place in the middle of the oven. Bake at 325 degrees F for 1 1/2 hours or until the cakes test done.

Remove the ginger ale pound cakes from the oven and let cool completely in the pans.

    Should I use salted butter or unsalted butter?

    • Salted. We will explicitly state unsalted if it's required. One way to tell is if there is additional salt called for in the recipe. Many baking recipes will use unsalted butter but then add salt (gives you more control over the recipe). However, this recipe is pretty forgiving so unsalted butter works fine.

    This is an awesome cake but you will need two loaf pans not one. There is absolutely no way this will fit into 1pan .

    I also needed two loaf pans. I used blackberry gingerale and almond extract instead of vanilla. The texture of the cake is very wonderful and the flavor is tasty. I like that I now have this recipe to adapt the flavors to what I have on hand. I am looking forward to trying different combinations of soda and extracts. Thank you for posting it.
