Chicken Sumi Salad

ingredients
1 package (3 ounce size) chicken flavored ramen noodles, reserve flavor packet for dressing
1 small head chopped cabbage
4 chopped green onions
1 cup slivered almonds, toasted
2 tablespoons toasted sesame seeds
2 cups chicken, cooked shredded and chilled
Dressing
1/2 cup oil
3 tablespoons toasted sesame oil or to taste
2 tablespoons vinegar
2 tablespoons sugar
salt and pepper, to taste
directions
Crush ramen noodles into 1/2 inch pieces. Set aside.
Toss together cabbage, green onions, almonds, sesame seeds and chicken. Add noodles and toss again.
To make dressing: Blend flavor packet, oils, vinegar and sugar in measuring cup or small bowl. Season to taste with salt and pepper. Cover and refrigerate until ready to use. Before using beat with a whisk to blend well.
Just before serving add dressing to salad and toss again.

I buy the preshredded coleslaw cabbage and that makes this such a simple recipe. I prefer to mix the dressing in about an hour before serving.
