Sunny Florida Orange Bread Pudding

ingredients
13 slices white bread, cut into quarters
1 1/2 cup orange juice
1/4 cup butter
1 cup sugar
2  eggs
1/2 teaspoon grated lemon rind
1/4 teaspoon ground cinnamon
directions
Preheat oven to 325 degrees F. 
 In a large bowl, combine the bread and orange juice and beat with mixer until smooth. 
 In a medium bowl, cream the butter and sugar until light and fluffy. Add remaining ingredients and mix well until creamy. Add to the bread mixture, mixing well. 
 Pour into a 1 1/2 quart casserole dish that has been coated with nonstick vegetable spray and bake for 1 hour, until the center is set and puffy. Serve at once. 
 NOTE: This really is best when served right from the oven.

I wanted a bread pudding without a lot of milk and with orange juice and this was PERFECT! Tasted great. I used a little more OJ than called for and might leave the breadcrumbs in cubes next time. I halved the recipe and baked it in a pie plate. Thank you!
