It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


4 cups bread cubes, (from ends )
2 cups water, or skim milk (hot)
2/3 cup brown sugar
1/2 cup raisins
2 apples, sliced thin
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
3 egg whites
Combine bread cubes, raisins, and apples in large bowl. Add water or milk and sugar. Mix thoroughly and let stand for 20-30 minutes.
Add beaten egg whites (just until foamy), cinnamon, and vanilla. Mix thoroughly.
Pour into a 1 1/2-quart sprayed casserole. Bake uncovered at 350 degrees F for 45 minutes to 1 hour, until set and lightly browned

it was ok. It could use some vanilla instant pudding, or something like that.
